Ingredients: – 2-3 chicken thighs or breasts cubed – 5-6 large or 10-15 small Yukon gold potatoes sliced into 1 inch chunks – 1 large yellow onion diced – 4-5 large carrots peeled and diced – 1 red bell pepper chopped – 1 green bell pepper chopped – 1 handful of spinach – 1 jalapeño sliced – 1 tbsp of minced garlic – 1 can of tomato paste – 1 14oz can of coconut milk – 1-2 tbsp of curry powder – 1-2 tbsp of garam masala – 1 tbsp of ginger – 1 tbsp of ginger – 1 tbsp of cilantro – 1/4 cup corn starch or flower(I used flower) – 1 tea spoon salt – 1 tea spoon pepper – Handful coconut flakes Directions: 1. Fry up potatoes on medium to high heat skillet until slightly brown 2. Add chopped onions, curry powder, and masala. Cook until potatoes are slightly undercooked and put into slow cooker 3. Slice chicken and cook on medium heat in skillet 4. Add spices and cook 7 minutes or until chicken looks cooked on the outside. Add to slow cooker 5. Chop veggies and add to crock pot 6. Open coconut milk, grab handful of coconut flakes, and add to slow cooker 7. Add flower for desired thickness 8. Cook on low heat for 6-8 hours or on high heat for about 4 hours 9. 30 minutes before cook time is done you may add water and corn starch if you didn’t add flower.
